Yellow Heirloom Tomato Gazpacho

It’s that time of year again – that odd transition between summer and fall when it’s still 90+ degrees out, yet everything is pumpkin-spice flavored. Deciding what to make for dinner can be a challenge on any given night, but this between season is particularly difficult for me. I’m tired of all my summer favorites, but it’s still just too hot for any of my savory fall specialties.

Enter this delightful heirloom tomato gazpacho! I know heirloom tomatoes are not technically a fall food, but there’s just something about them that makes me think of fall. Maybe it’s because they look like edible gourds? Whatever the reason, I saw them on display at Whole Foods this week and knew it was time to dust off this recipe. This cold soup is fresh, flavorful, and the perfect end-of-summer meal. It’s so simple to make and requires no actual cooking, plus it can be made in advance and enjoyed for several days.

I love that all of the ingredients are raw, which makes it healthy AND delicious! I usually enjoy this as the main course of the meal and pair it with my favorite grilled veggies, but it works just as well as a side dish too!

Yellow Heirloom Tomato Gazpacho

Ingredients

  • 2 large yellow heirloom tomatoes (roughly chopped)

  • 2 ears of corn (removed from cob)

  • 1 yellow bell pepper (seeded and chopped)

  • 1 jalapeño pepper (seeded and chopped)

  • 1 small yellow onion (roughly chopped)

  • 2 cloves garlic (chopped)

  • 1/4 cup olive oil

  • sea salt

  • cayenne pepper (to taste)

Instructions

  1. Combine tomatoes, bell pepper, corn, onion, jalapeño, and garlic in a large bowl

  2. Sprinkle sea salt and cayenne pepper over all ingredients. Mix well and refrigerate for 1 hour

  3. After 1 hour, blend ingredients along with the olive oil until desired consistency is reached 

  4. Garnish with olive oil, cherry tomatoes, additional corn kernels, cayenne pepper, and sour cream if desired

  5. Serve cold!
